Grapefruit, ginger, and quinine bitterness in a tonic syrup – one part syrup, eight parts sparkling water, and your tonic is ready.

Wajos Pink Grapefruit Tonic Syrup is a syrup for making a quinine-based refreshment, 200 ml, from Dohr on the Moselle. It consists of sugar, citric acid, natural flavors, grapefruit juice concentrate, and natural ginger flavor, colored with carrot and blackcurrant. This is not a ready-made tonic water, grapefruit juice, or liqueur, but a concentrate that you mix yourself with sparkling water. Vegan.

Pink Grapefruit Tonic Syrup by Wajos replaces the crate of tonic water in the basement with a single bottle on the shelf. The idea is simple: one part syrup, eight parts soda water, and 200 milliliters turns into nearly two liters of tonic. The bitterness comes from quinine aroma, as in any tonic, but with added grapefruit – fruity and slightly tart – and ginger, which provides a gentle warmth at the end. This is a tonic with character that holds its own in a Gin & Tonic and works perfectly on its own as a soda.

Grapefruit at the front, ginger at the back, and the bitterness of quinine in between

Straight, the syrup is very sweet – 93 grams of sugar per 100 milliliters; it is a syrup made for diluting. Once diluted, it becomes a tonic that tastes like grapefruit first: the fruity and slightly tart notes from the juice concentrate and natural flavors. Then comes the quinine bitterness that distinguishes a tonic from a standard lemonade, and finally ginger, which is spicy rather than hot. The color comes from carrot and blackcurrant instead of artificial dyes. This syrup is not suitable for those expecting a dry, neutral tonic for a classic London Dry – the Botanical Tonic Syrup with juniper and lemongrass is a better choice for that.

With sparkling water as a tonic, with gin, in sparkling wine, or as a lemonade for kids

The base mixture is one part syrup to eight parts soda water. This means 2 cl of syrup in a glass with 160 ml of sparkling water, plenty of ice, and stir. Wajos recommends this ratio, and it works – if you prefer it fruitier, add an extra splash. For a Gin & Tonic, add 4 cl of gin and a slice of grapefruit. A dash of syrup in a glass of sparkling wine or Secco makes for a great aperitif; a spoonful in plain mineral water creates a lemonade that children can enjoy too. If you prefer it more bitter, use less water. The syrup is not suitable to be consumed neat or over ice: it is too sweet, and the bitterness becomes unpleasantly prominent. Store in a cool, dry place away from light; once opened, keep refrigerated.

Our tip: Syrup, sparkling water, ice, and a sprig of rosemary – it’s the non-alcoholic drink that gets ordered more often at our place in summer than the Gin & Tonic next to it.

Tonic from a house that started with liqueurs

Wajos is a culinary manufacturer in Dohr near Cochem on the Moselle, and the bar is where it all began. Walter Josef Oster, the namesake and founder from a winemaking family in Ediger-Eller, started with liqueurs in the 1980s. From the 2000s onwards, Peter Oster and Ulf Schwichtenberg turned it into a brand featuring gins, rums, and syrups, with over 80 employees and their own stores since 2008.
