Worth it! Making your own hummus
Hummus is the perfect dip for any gathering — flexitarians, vegetarians, and vegans love it equally. It goes well with salads, grilled vegetables, or meat and makes a wonderful spread. Using pre-cooked chickpeas, the dip can be prepared in 10 minutes. Homemade hummus tastes significantly more flavorful than store-bought versions and contains no additives.
Hummus ingredients
Canned chickpeas: These are pre-cooked and can be used immediately after draining. If making the dip from dried legumes: soak the chickpeas overnight and cook for about 2 hours the next day. Tip: A little baking soda during soaking speeds up the cooking process and makes the chickpeas extra creamy.
Tahini: An Arabic sesame paste that gives hummus its typical nutty flavor. Available in organic stores, Turkish supermarkets, and well-stocked grocery stores.
Lemon: Freshly squeezed lemon juice makes the hummus vibrant and balanced. Use a little or a lot, according to your preference.
Garlic: One to two cloves are usually enough — but that is a matter of taste.
Olive oil: High-quality olive oil gives the hummus shine and depth. Some goes into the hummus, the rest is drizzled over the finished dip.
Spices: Salt, cumin, sweet paprika. Optional: a touch of cayenne or chili for heat.
Preparation
- Drain the chickpeas and rinse with cold water. Set aside about 2 tbsp of aquafaba (chickpea water) — this makes the hummus extra creamy later.
- Process all ingredients (chickpeas, tahini, lemon juice, pressed garlic, olive oil, cumin, salt) in a blender or with an immersion blender until a creamy consistency is reached.
- If necessary, add a little aquafaba or water until the desired consistency is reached.
- Season to taste — add more salt, lemon, or tahini if needed.
- Transfer to a bowl, drizzle with olive oil, and sprinkle with paprika powder. Fresh parsley or roasted chickpeas make perfect toppings.
Variations
- Beetroot hummus: Puree with a cooked beetroot for a bright pink highlight.
- Bell pepper hummus: With roasted red bell pepper — smoky and sweet.
- Avocado hummus: With a ripe avocado — extra creamy.
- Bean hummus: With white beans instead of chickpeas — Mediterranean.
Storage
Homemade hummus will keep in a tightly sealed container in the refrigerator for 3–4 days. It can also be frozen — just stir briefly after thawing.
