apros: Vermouth from the Black Forest
apros describes itself as a modern vermouth from the Black Forest. Behind the flavor are Johannes von Gleichenstein and Achim Berger. Von Gleichenstein is the ninth-generation owner of the Freiherr von Gleichenstein winery in the Kaiserstuhl region and is responsible for selecting the grape varieties and wines. Berger is a well-traveled restaurateur who has worked as a restaurant director in Chicago, Dubai, and Bangkok, and served as Head of Taste to define the flavor profile. The brand's goal: apros Vermouth is meant to be enjoyed primarily on its own. The name is derived from Latin and refers to the wild boar.
From the Kaiserstuhl to the Elztal Distillery
The base wines are produced at the Freiherr von Gleichenstein winery. At the family-run Elztalbrennerei Weis in Gutach im Breisgau, a portion of the white base wine is distilled into a clear wine spirit. The botanicals are steeped in this spirit, and the macerate is then blended with the base wine and bottled. This results in three varieties: White, Rosé, and Red.
White Vermouth made from Pinot Gris
The White Vermouth 750ml is based on Pinot Gris from the Kaiserstuhl. Its key botanicals are bergamot, lemon peel, chamomile, and spignel. In the glass, it shows a rich golden yellow; on the nose, notes of melon, pear, and mirabelle; on the palate, a powerful freshness with the bitter note of wormwood. The producer recommends it as an aperitif, served neat over ice, as a Vermouth & Tonic, or as a White Negroni. It has an ABV of 18%, and sale is restricted to persons aged 16 and over.
