89Süd Manufaktur: Syrup Essences from Bavarian Swabia

89Süd is a small artisan producer in Waldkirch near Winterbach in the district of Günzburg. Flora and Christoph Nieß grow most of the fruit, herbs, and flowers themselves using companion planting, harvest elderberries from the surrounding forests, and cook the raw ingredients at the time of harvest. Everything from cultivation and bottling to labeling passes through their hands – Flora Nieß even draws the illustrations on the bottles herself. Since summer 2020, the essences have been organic-certified, with the only exception being the quince, for which regional sourcing of the fruit was more important than the seal.

What distinguishes a syrup essence from syrup

89Süd essences rely on a high proportion of fruit, herbs, or flowers and less sugar than classic syrup. This makes them more dilutable: one part essence to eight or nine parts water creates a spritzer, with a 330 ml bottle yielding around three liters of lemonade. They are equally well-suited for sparkling wine and Prosecco, as a spritz, in gin cocktails, or in tea.

Seven varieties

The Rhubarb Syrup Essence made from their own rhubarb is the classic, the Lavender-Elderflower Syrup Essence is the floral lavender syrup for lemonade and spritz. The Bitter Lemon Syrup Essence made from organic Sicilian lemons replaces bitter lemon, the Quince Syrup Essence is fruity and tart and also goes well in hot tea. In addition, there is Hop-Lemon Balm with a fine bitter note, Green Herbs made from mint, lemon balm, tarragon, geranium, and ground elder, as well as the newest variety, Cassis-Lemon.
