Brandgut: Roasted nut cream

You likely know candied almonds from the fair: nuts heated with sugar until a crunchy caramel crust forms. In Hamburg, Meike Grosch and Daniel Thaung have brought this concept into a jar. Under the name Brandgut, which translates to "burnt goods," they turn roasted nuts into spreadable creams that retain little crunchy bits. They only add sugar, sea salt, and—depending on the variety—vanilla sugar and a little sunflower oil. The result is sweet, with notes of caramel and roasting, while the salt provides a contrast.

The Peacetazie is a crunchy pistachio cream with 45% pistachios and 1.4% sea salt. The Mandelikat brings the taste of candied almonds to your bread as an almond cream. The Haselgenuss is a toasted hazelnut cream without any cocoa, containing just 0.9% sea salt. Mild and delicately nutty, the Cashjuhu is a cashew cream perfect for hearty bread. Yes, Pe Can is a pecan cream that is the only variety made without added oil. The Erdnuss Muss, as a peanut cream with 52%, has the highest nut content and also pairs well with Asian cuisine.

How to use the creams

On bread, over ice cream, in crêpes or pancakes, with cake, with cheese, or straight from the spoon. Because Brandgut avoids additives, the nut oil will separate and rise to the top over time, while the crunch settles at the bottom. Therefore, stir the cream briefly before use. Store the jars away from heat and light. They go well with croissants and farmhouse bread for breakfast, or on waffles or pancakes in the afternoon. You can also stir the peanut cream into a dressing for rice noodles, or top ricotta with the pistachio cream.
