Heldenberger Apfelbiene Organic Apple Balsamic. Organic apple balsamic vinegar from heritage apple varieties of the Wetterau – fruity, clear, and with 5% acidity.
Heldenberger Apfelbiene Organic Apple Balsamic is an organic apple balsamic vinegar made from long-ripened apples of heritage varieties such as Gravensteiner, Kaiser Wilhelm, and Boskoop. The apples grow in traditional orchards in the Wetterau region near Nidderau. The bottle contains 250 ml with 5% acidity and is Naturland-certified.
Apple Balsamic from Heldenberger Apfelbiene is the pure apple version of the two vinegars offered by the company. According to the manufacturer's website, it consists of 100% organic apples from traditional meadows and contains no additives. In April 2015, the company introduced its first apple balsamic vinegars. They described them as creamy and fruity, created using a handcrafted process from the juice of many long-ripened apple varieties. The term "balsamic" here denotes a round, mild vinegar with plenty of fruit. It is not a dark, thick grape balsamic. It is light, clear in taste, and tastes distinctly of apple. With 5% acidity, it has the strength of a culinary vinegar, yet feels softer than a simple apple cider vinegar due to its fruitiness.
Taste
The apple balsamic tastes fruity, fresh, and apple-like, with a clear acidity. Its aroma is reminiscent of freshly pressed apple juice and a cellar full of stored apples in the autumn. On the palate, the acidity is more pronounced than in the honey variety, supported by a well-rounded apple fruitiness. The blend of several heritage varieties provides depth. Those looking for a sweet, syrupy balsamic for strawberries or vanilla ice cream will find this vinegar too acidic. In a salad bowl, however, this very clarity is an advantage.
Usage
According to the manufacturer, the apple balsamic pairs well with fresh summer salads and for seasoning savory dishes. For a vinaigrette, mix one part vinegar with two to three parts oil, plus salt and pepper. If you prefer it rounder, add a pinch of sugar or a spoonful of honey. This goes well with lettuce, cucumber salad, potato salad, and coleslaw.
When cooking, use it to season lentils, red cabbage, sauerkraut, or goulash sauce. A splash in the frying pan deglazes the roasted bits and adds freshness to the sauce. It provides a fruity accent to fried blood sausage with apple slices, pork belly, or roasted pumpkin. Store the bottle tightly closed in a cool, dark place.
Our tip: Hessian potato salad with warm broth, onions, and a splash of apple balsamic. The apple note fits the region the bottle comes from.
Origin
Heldenberger Apfelbiene is a small family business in Nidderau-Heldenbergen in the Wetterau, managed by Annkathrin and Holger Weiß. Their traditional orchards are located on the slopes of the Wetterau and contain old-growth trees. Many varieties date back to the 19th century or are even older. The apples ripen as long as possible on the tree and are harvested by hand. In addition to balsamic vinegar, the fruit from these meadows is also used to make apple juice and apple wine. The company is a member of the Pomologen-Verein and is committed to preserving heritage fruit varieties. By maintaining the orchards, Annkathrin and Holger Weiß aim to revive old rural traditions such as fruit growing and beekeeping. Since July 1, 2014, the company has been a member of Naturland. The current certificate explicitly mentions the apple balsamic vinegar. Allergen information: The manufacturer does not list any mandatory allergens for this vinegar; the bottle label is binding.
For whom
The apple balsamic is for everyone looking for a fruity vinegar with clear acidity for daily cooking. It suits people who enjoy dressing salads, seasoning sauces, and making roasted vegetables. Those who are passionate about heritage apple varieties and traditional orchards will find a piece of the Wetterau in this bottle. Milder and with a fine sweetness is the Organic Apple Balsamic with Honey from their own apiary. You can find more about the company on our Heldenberger Apfelbiene page. This vinegar is not suitable for those looking for a thick, sweet balsamic for drizzling over desserts.
