Berger Marc de Champagne Rose filled. Filled organic white chocolate with Marc de Champagne ganache and rose petals, 100 g.
Berger Marc de Champagne Rose filled is a filled bar of organic white chocolate. Inside is a creamy ganache with Marc de Champagne, refined with rose, and topped with rose petals. The bar weighs 100 g and comes from the Berger Confiserie in Lofer in the Salzburg region.
Marc de Champagne Rose filled by Berger is a filled bar, and these are the trademark of the Berger brand. The manufacturer describes them as a variation of the classic praline. Beneath a thin layer of chocolate lies a soft filling, just in bar form rather than individual pieces. Here, the filling consists of a ganache—a cream made from heavy cream (as it is called in Austria) and chocolate. Marc de Champagne, a brandy made from the pomace of champagne grapes, is added to this ganache. Its content in the bar is 1.78%. It is rounded off with natural rose aroma, which the manufacturer refers to as rose oil. The shell is white chocolate made from cocoa butter, whole milk powder, raw cane sugar, and vanilla. Finally, rose petals are added to the surface, which stand out particularly well on the light-colored bar.
Taste: creamy, floral, and with a fine wine note
White chocolate tastes of milk, vanilla, and cocoa butter, entirely without the roasted notes of dark varieties. This base is mild and sweet, and that is precisely why the rose and Marc de Champagne shine through clearly. When you take a bite, the thin shell gives way quickly, followed by the soft ganache.
The rose manifests as a floral scent that is noticeable as soon as the packaging is opened. The Marc de Champagne adds a wine-like, slightly tart note to the filling, thereby tempering the sweetness of the white chocolate. The rose petals on the surface are delicate and provide a fine texture to the first bite.
Floral notes are a matter of taste. Anyone who associates the taste of rose in sweets with soap will find this bar too floral. Those who like rose water, Turkish delight, or rose marzipan will find an elegant chocolate version here.
Usage: for festive moments and with coffee
This bar is intended for moments that are a bit more festive than an ordinary afternoon. After a celebratory meal, serve it in small pieces with coffee. For an occasion where a toast is made, it fits well on the table because the Marc de Champagne creates a bridge to the glass.
As a gift, it is suitable for anniversaries, Mother's Day, birthdays, or as a thank you for an invitation. Filled bars like it cool. Store them in a dry place, not above room temperature, and protected from heat and sun so that the shell and filling maintain their shape.
Our tip: Break the bar into praline-sized pieces and place them on a small plate with your coffee. This turns the bar into a small selection of pralines, and the rose petals are shown to their best advantage.
Origin: filled bars handmade in Lofer
Berger Confiserie is based in Lofer in the Pinzgauer Saalachtal valley. Hubert and Christine Berger specialized in fine pralines and sweet works of art there in September 1994. The fact that the filled bars are their trademark today fits well, as they combine the praline with the bar. Hubert Berger describes the process: The fillings are cooked, poured into a wafer-thin chocolate shell, coated with chocolate, and finally garnished by hand. In this variety, the rose petals on the surface complete the look.
Production takes place exclusively in Lofer. In the meantime, Anna and Franz Berger are joining the management, with Franz responsible for product development as a chocolatier. The bar is certified organic with the control number AT-BIO-301. The manufacturer calls it "Bio Weiß Marc de Champagne-Rose gefüllt."
For whom: for rose lovers and festive occasions
The bar suits everyone who likes white chocolate and appreciates floral notes. It is a gift for people who like to try new things, and a bar for celebrations for two. Those who prefer dark chocolate with fruit will find the filled dark chocolate bar with pomegranate at Berger. The white chocolate with strawberry pieces is also based on white chocolate. You can find the entire assortment at Berger Confiserie.
The bar contains milk and, according to the manufacturer, may contain traces of peanuts and nuts. The content of Marc de Champagne is 1.78%. Contains alcohol – not suitable for children.
