Ölmühle Solling Organic Condimento Bianco. Light organic condiment vinegar made from white wine vinegar and grape must – sweet, mild in acidity, and aged in oak barrels.
Ölmühle Solling Organic Condimento Bianco is a light organic vinegar made from white wine vinegar and concentrated grape must, produced in the style of an Aceto Balsamico and aged in small oak barrels. The grapes originate from Italian agriculture. Ölmühle Solling from Boffzen bottles it in 250 ml containers, with an acidity level of 5.0%.
Condimento Bianco from Ölmühle Solling is the light counterpart to dark balsamic vinegar. In Italian, "condimento" simply means seasoning. The term is used for vinegar preparations that are structured like a balsamic but do not fall under its protected designation. "Bianco" refers to the light color. It is based on vinegar made from freshly pressed white wine, to which boiled, concentrated grape must is added. The must provides sweetness and body, while the vinegar provides the acidity. The mixture then matures in small oak barrels until the components harmonize. The result is a vinegar that tastes softer and rounder than pure white wine vinegar. Because it remains light, it does not discolor salads, sauces, or fruit. This is a particular advantage over dark balsamic vinegar for dishes like asparagus, potato salad, or light fish dishes.
Taste
According to the manufacturer, the Condimento Bianco has a sweet note and mild acidity. On the palate, you first experience the fruity sweetness of the grapes, followed by a fresh yet gentle acidity. A round, fruity finish remains.
With 5.0% acidity, it falls within the standard range for table vinegar but tastes significantly milder due to the must. Those looking for a sharp, bold vinegar for hearty cabbage salads will find it too sweet. For everyone else, it is a vinegar you can even enjoy straight off a spoon.
Use
For a salad dressing, the manufacturer recommends one part vinegar to three parts oil. It pairs particularly well with nutty, mild oils such as grape seed, walnut, or almond oil. Combined with walnut oil, mustard, salt, and pepper, it makes a great dressing for lamb's lettuce with pear.
According to the manufacturer, it also suits dips, sauces, and marinades, pickling, fruit salads, and desserts. A splash refines hollandaise or a light cream sauce. In a marinade for chicken or vegetables, it provides a sense of freshness. Over strawberries with a little sugar and mint, it makes a quick dessert. It is also suitable for pickling red onions or radishes. The mild acidity leaves the vegetables crisp and slightly sweet—a wonderful side dish for burgers and bowls.
Our tip: Drizzle melon, burrata, and a few basil leaves with Condimento Bianco and a good olive oil. The light vinegar keeps the colors fresh and brings sweetness and acidity together.
Origin
According to the organic logo, the grapes for this vinegar are grown in Italy and monitored by the body DE-ÖKO-039. It is produced from freshly pressed white wine, fermented into vinegar, and combined with grape must concentrate. Maturation in small oak barrels gives it its rounded character.
In addition to its oils, the Ölmühle Solling from Boffzen offers 21 vinegars and vinegar creams according to its fact sheet. For its 30th anniversary in 2026, limited barrique vinegars were added. If a cloudy, jelly-like mass forms in an opened bottle, the manufacturer notes that this is a "mother of vinegar" and not a sign of spoilage. You can simply pour it off or strain the vinegar through a fine sieve.
For whom
This vinegar is for anyone who likes their salad dressing mild and rounded, and for light dishes that should not be stained by dark colors. According to the manufacturer, it may contain traces of sulfur dioxide and sulfites. Store the bottle in a cool, dark place; according to the manufacturer, it has an unlimited shelf life. Condimento Bianco is also available in a smaller size in the "Saure Renner" Vinegar Tasting Set. Walnut oil as a partner can be found in the "Kernige und Nussige Renner" Oil Tasting Set. You can find more information on our Ölmühle Solling page. It is not suitable for recipes that require a sharp, pungent acidity.
