Goufrais is produced in Weil am Rhein, on the site of a former fruit farm that was converted for food production. The mass is poured into molds of 64 pieces each, tapped to settle, and cooled for two days. Afterward, it is dusted with cocoa and packed by hand. The company is certified according to the International Featured Standard (IFS).

Goufrais is run by a family. The company name CMF is derived from the initials of the three siblings Corinna, Michael, and Frank. Michael Keller is the owner, and Corinna Ermutlu and Frank Keller are part of the management. The idea was conceived in 1993 by Günter Keller and his son Michael.
