As the name suggests, it combines the French word “le goût” for pleasure with “frais” for fresh and cool. The manufacturer calls it “The cool indulgence.” But what exactly is it? Goufrais is a cocoa confection, not chocolate. In chocolate, the fat comes from the cocoa bean, i.e., cocoa butter. Goufrais relies instead on coconut and palm kernel fat, along with sugar and highly defatted cocoa powder at 11.5%. This blend gives the small Gugelhupf its unique bite and melt.

Taste

A Goufrais is initially firm and then melts slowly and delicately on the tongue. This is how the manufacturer describes it, and that is precisely what makes it so appealing. As you bite into it, you first feel the chill, then the confection gradually dissolves.

On the outside is a layer of cocoa powder, which feels dry and tart upon first contact. Beneath that lies the sweet, creamy mass. According to the manufacturer, this results in a delicate yet robust cocoa aroma. Vanilla extract rounds it off without being overpowering.

Usage

The manufacturer recommends enjoying Goufrais chilled or at room temperature. This means: take the Gugelhupfs out of the fridge and let them sit at room temperature for three to four minutes. This allows the aroma to fully unfold while the core remains cool.

Classically, a Goufrais belongs next to a cup of coffee or tea. At the Sunday coffee table, the golden pouch is quickly opened and passed around. According to the manufacturer, the confection is also suitable for tastings with coffee, wine, or spirits. Try a piece with a strong espresso or a glass of port wine after a meal. Goufrais comes from Weil am Rhein, on the edge of the southern Black Forest, where Germany, France, and Switzerland meet. The story began in 1993. Günter Keller and his son Michael developed the idea back then. Production has been ongoing since 1994. Today, Michael Keller is the owner of the family business.

Remarkable is the focus on one thing. For over 25 years, the company states it has offered only a single product: this very small Gugelhupf. The packaging is varied, not the recipe. On its website, Goufrais advertises “Made in the Black Forest” and daily fresh production. Because the confection is heat-sensitive, the manufacturer only ships it during cool weather.
