Lang Weinessig Vinaigrette Doro. Vinegar preparation with tomato extract, savory and Mediterranean – the small bottle for trying and gifting.
Lang Weinessig Vinaigrette Doro is a vinaigrette from the Southern Palatinate: 77 percent red and white wine vinegar aged in oak barrels, combined with organic sugar, sea salt, grape must, and extract of dried tomatoes. 180 ml, savory-fruity and bold. It is a vinegar preparation without oil that adds the finishing touch to salads, antipasti, and warm dishes.
Doro by Lang Weinessig is a vinaigrette with a Mediterranean twist: the flavor of sun-dried tomatoes is infused into the wine vinegar, complemented by a slight sweetness. The 180 ml bottle is the perfect size for getting to know it: for a two-person household, for tasting, or as a small gift for those who love to cook.
Sun-dried tomato, wine vinegar, a touch of sweetness
Doro tastes savory and fruity, with a deep tomato note that pairs well with the acidity of the red and white wine vinegar. According to Lang Weinessig, the tomatoes steep in the vinegar for around a year, releasing their flavor and aroma during this time.
Sugar and grape must are included in the ingredient list to round out the profile. The result is a bold, harmonious dressing that doesn't overpower.
If you are expecting a mild, light vinaigrette for delicate greens, you might find Doro too present. It has character and is meant to be noticed in a dish.
If you are trying Doro for the first time, use it first in a dish you know well: a tomato salad, a pasta salad, or a sauce. This way, you will immediately taste the difference compared to ordinary vinegar and learn how much you need.
Caprese, arugula, goulash, and a dip for bread
Doro pairs well with salads featuring mozzarella and tomato, with arugula and Parmesan, with grilled or roasted vegetables, and with pasta. Antipasti also gain more depth with a dash of it.
In the kitchen, Doro is a great addition to hot dishes: add a small amount to your goulash or use it to season the gravy for your next roast beef. The vinaigrette is suitable for both vegetarians and meat lovers alike. As a dip, it works well with olive oil and ciabatta.
There is no oil in the bottle, so you can mix it in yourself depending on the dish. Start with one tablespoon of vinaigrette per portion of salad and taste before adding more.
The small bottle is easy to place on the table. If you bring Doro to a barbecue or a snack platter, you give every guest the chance to season their own vegetables and meat.
Our tip: First dip a piece of ciabatta in olive oil, then in a drop of Doro. If you like the combination, you know you've found a variety you really enjoy.
Tomatoes that spend a year in vinegar
Lang Weinessig is a manufactory based in Gommersheim in the Southern Palatinate, founded by professional chef Jens Michael Lang. He trained and worked in fine dining and has been producing wine vinegars, vinaigrettes, fruit balsams, and ready-made salad dressings for over ten years.
Many products are based on wines from an organic-certified winery in the Southern Palatinate. For Doro, there is the long waiting time: the dried tomatoes remain in the wine vinegar for more than twelve months, and according to the manufactory, it is only through this aging process that the flavor of this Italian classic is truly captured.
Lang Weinessig calls the Palatinate the "Tuscany of the North": plenty of sun, even figs, and above all, wine. Doro brings this connection to the bottle with its tomato extract.
The small bottle for the curious and as a gift
The 180 ml bottle is intended for anyone who wants to try Doro, uses it in a small household, or wants to give it as a gift. If you frequently make goulash, Caprese, or roast gravies, the Vinaigrette Doro in 500 ml is a better choice.
As a milder sister, the Organic Vinaigrette Liese with Riesling is available in the same size. If you would like to test several varieties, choose the Vinaigrette Gift Set. You can find all products from the manufactory on the Lang-Weinessig page.
As a gift, Doro is intended for people who love to cook and enjoy Mediterranean cuisine. The long aging time of over a year is a story you can share when giving it away.
Doro is not suitable for those looking for a delicate, light vinaigrette for fish or leaf lettuce. For that, Liese is the better choice.
