Kohl Mountain Apple Juice Pinova. Single-variety apple juice from Renon – full-bodied, velvety, with aromas of peach and grape.

Kohl Mountain Apple Juice Pinova is an unfiltered direct juice made from 100% Pinova apples. Thomas Kohl presses it at the Troidner fruit farm in Auna di Sotto on the Renon plateau, South Tyrol. The 750 ml bottle contains pure apple juice with no added sugar.

Pinova Mountain Apple Juice by Kohl answers a question that hardly anyone asks themselves at breakfast: What does a single apple actually taste like when it is turned into juice? Most apple juices are blends of many varieties. Here, only one enters the press: the Pinova. According to the producer, it is a cross between Golden Delicious and Clivia. The result smells surprisingly little like an apple from a fruit bowl and much more like summer fruit. Kohl calls his juices mountain apple juices because the orchards are located at an altitude of almost 1,000 meters above sea level. The Pinova belongs to the GOURMET line, in which every bottle is dedicated to a single variety.

Taste

The Pinova tastes full-bodied and velvety, with a balanced interplay of fruit and acidity. It shows a light straw-yellow color in the glass.

On the nose, according to the producer, you will find notes of ripe white peach and white table grapes. These are accompanied by floral nuances and a hint of honey. On the palate, it feels round and soft; the acidity keeps it fresh without being overpowering. The finish is long and mild. Those expecting a tart, sour apple juice will likely find it too soft. For everyone else, it is a juice that combines fruit and elegance. The honey tone in the background, in particular, makes it a good companion for cheese. And the peach notes ensure that it also feels light on warm days.

Usage

Serve the Pinova at 8 to 10 °C in a stemmed glass. Thomas Kohl recommends it with delicately spiced pasta dishes, roasted light meat, and aged semi-hard cheese. Think of tagliatelle with lemon and ricotta, a veal schnitzel with sage, or pan-seared chicken breast with vegetables. For cheese, an aged mountain cheese or a spicy semi-hard cheese from South Tyrol works well. The salt in the cheese and the fruit sweetness in the glass balance each other out.

It is also great enjoyed on its own with lunch or as a spritzer with mineral water. Once opened, store the bottle in the refrigerator and, according to the producer, consume it within six days. Store unopened in a cool, dark place.

Our tip: For dinner, put a board with aged mountain cheese, walnuts, and Schüttelbrot (crispbread) on the table and pour the Pinova chilled into a stemmed glass.

Origin

The Pinova grows in Thomas Kohl’s apple orchards on the Renon, several hundred meters in altitude above Bolzano. The sites face from east to southwest and, according to Kohl, are extremely sunny. In the evening, cool mountain air moves across the slopes. These large temperature differences between day and night allow the apples to ripen slowly. Harvesting takes place between August and October, with each tree picked in two to three passes. The apples are picked individually by hand and only when they are fully ripe. They are pressed directly on the farm, after which the juice is gently pasteurized. According to the data sheet, no preservatives or other additives are included.

For whom

Kohl Mountain Apple Juice Pinova is for anyone looking for apple juice with depth who enjoys having a nice glass on the table with their meal. It goes well with pasta in the evening, Sunday dinner with light meat, or a cheese board with friends. According to the manufacturer, the juice contains none of the 14 main allergens and bears the vegan label of the European Vegetarian Union. The Mountain Apple Juice Sonnenglanz, a crossbreed with Pinova as a parent, is fresher and shows citrus notes. You can find all varieties on our Kohl Mountain Apple Juice page. It is not suitable as a thirst quencher in large glasses; it is too refined for that.

One variety, 750 ml of unfiltered mountain apple juice from the Renon – velvety, with a peach aroma and a fine companion to pasta and cheese.
