DR. HÖHL'S BioEss Organic Apple Cider Vinegar, cloudy. Organic apple cider vinegar made from whole apples from meadow orchards – cloudy, mild, and double-fermented.
DR. HÖHL'S BioEss Organic Apple Cider Vinegar, cloudy is an organic apple cider vinegar with 5% acidity, made from the direct juice of whole apples from German meadow orchards. The BioEss brand comes from the Höhl family in Maintal, near Frankfurt. The 500 ml glass bottle contains nothing but apples, and it is unfiltered and vegan.
BioEss Organic Apple Cider Vinegar, cloudy by DR. HÖHL'S is vinegar in its original form. Apple cider vinegar is created in two fermentation steps. First, yeasts convert the sugar in the freshly pressed apple juice into alcohol, creating apple wine. Then, acetic acid bacteria turn this alcohol into acetic acid. The manufacturer specifically highlights this double fermentation. For BioEss, it begins with direct juice from whole organic apples, pressed including their skins and cores. "Cloudy" means the vinegar is not filtered to clarity after fermentation. The fine sediment consisting of fruit particles remains in the bottle and settles at the bottom over time. Therefore, give the bottle a quick shake before pouring. According to the manufacturer, this sediment makes the vinegar taste milder than its clear counterpart. The list of ingredients is as short as possible: whole organic apples. According to DR. HÖHL'S, no sulfurous acid or additives are included. For years, the cloudy BioEss has been one of our most popular vinegars on the shelf.
Flavor
Mild and aromatic—that is how DR. HÖHL'S describes the flavor. In the glass, the vinegar smells distinctly of apple, ripe fruit pulp, and a little bit of must. The acidity is clearly present, but it feels rounder than in a filtered vinegar. At 5%, it falls within the typical range for apple cider vinegar.
On the tongue, the cloudy vinegar feels a bit fuller. This is due to the suspended particles from the fruit, which also provide its golden, slightly cloudy color. It carries almost no sweetness, as the fructose is almost entirely converted into acid during fermentation. What remains is a fresh, fruity apple note with a short, clean finish.
Because apples from meadow orchards are used, the vinegar tastes like a blend of many varieties. This gives it more depth than a vinegar made from a single table apple variety. Anyone expecting a crystal-clear, neutral vinegar for light-colored sauces will find the cloudiness distracting. For such cases, the filtered BioEss is available.
Use
Cloudy BioEss is an everyday vinegar for salads, soups, and drinking. According to the manufacturer, many people drink it diluted in water as a daily apple cider vinegar drink. One tablespoon in a large glass of water is enough; if you like, add a teaspoon of honey. The mixture tastes warmer with hot water and a cinnamon stick.
In the kitchen, DR. HÖHL'S recommends it for dressings and for seasoning soups, sauces, and vegetables. For a classic vinaigrette, whisk together one part vinegar with three parts oil, salt, pepper, and a little mustard. It goes well with Hessian-style potato salad, cucumber salad with dill, or coleslaw for a barbecue. A dash adds a finishing touch to lentil soup, or a stew with beans or peas. The acidity makes heavy dishes feel lighter and enhances their natural flavor.
According to the manufacturer, the vinegar is also suitable for pickling. Slice red onions into rings, cover with vinegar, water, sugar, and salt, and let soak for an hour. They are great on burgers, tacos, or bread with cream cheese. Red cabbage also needs a good splash of apple cider vinegar to maintain its color. For oven-roasted beetroot, two spoons with a little oil and thyme are sufficient. And a grill marinade made of oil, mustard, paprika, and a splash of apple cider vinegar gives pork neck a fresh note. To ensure precise dosing, the manufacturer recommends using a suitable pourer.
Our tip: Add a tablespoon to the water in which you poach eggs. The egg white coagulates faster, and the eggs retain their shape.
Origin
The story of BioEss begins in 1962. Back then, the grandfather of the current generation launched the "bio-ess" brand after completing his training in Switzerland. Organic food was still a niche market back then, and organic apple cider vinegar in a store was a rarity. Nevertheless, the family stuck with it and expanded the brand over the decades. It was produced at the Höhl cider mill in Maintal-Hochstadt, a business that had processed regional apples for generations.
In 2007, the cider mill was sold, and with it, the apple juice and apple wine brands, as well as BIO-ESS, went to new owners. The next generation wanted the vinegar back. With their new family business, Johanna Höhl and her children Johannes and Anna bought the BioEss brand back. According to the manufacturer, BioEss has been brewed according to traditional craftsmanship since 1962.
The apples come from German meadow orchards. There, high-stemmed fruit trees of old varieties grow scattered across meadows that are mown or grazed. According to the manufacturer, one of the largest contiguous areas of this kind is located around Frankfurt. The apples are organic, inspection body DE-ÖKO-001. The vinegar is vegan and, according to the ingredients list, contains none of the 14 main allergens.
For whom?
Cloudy BioEss is for everyone looking for an honest apple cider vinegar for every day. It belongs in kitchens where salad is regularly served, vegetables are pickled, or a stew is seasoned. Those who enjoy a glass of water with apple cider vinegar in the morning will find it a mild candidate. The simple ingredient list is also convincing for people who look closely at what they buy. The filtered brother for light sauces and preserving jars is available as BioEss Apple Cider Vinegar, clear. It becomes rounder and sweeter with the REZEPTUR 1779 Apple Cider Vinegar with Honey. You can find all the family's bottles on our DR. HÖHL'S page. The cloudy vinegar is not suitable if a marinade or sauce needs to remain perfectly clear.
