DR. HÖHL'S RECIPE 1779 Apple Cider Vinegar with Honey. Organic vinegar specialty made from meadow orchard apple cider vinegar and Bioland honey – mild, sweet and sour, and unpasteurized.
DR. HÖHL'S RECIPE 1779 Apple Cider Vinegar with Honey is a blend of 60% organic apple cider vinegar from local meadow orchards and 40% German Bioland honey. It comes from DR. HÖHL'S in Maintal near Frankfurt, in a 350 ml apothecary bottle with a pourer. The vinegar is unpasteurized and contains living "mother of vinegar."
RECIPE 1779 Apple Cider Vinegar with Honey by DR. HÖHL'S belongs to a very old family of seasoning blends. Vinegar and honey, stirred together into a liquid that is simultaneously sour and sweet. In Greek, such a mixture is called oxymel, composed of the words for sour and for honey. The manufacturer explicitly names oxymel shots as one application. It is based on raw apple cider vinegar: it is created from the direct juice of whole meadow orchard apples and is then bottled unpasteurized. The "mother" is that gelatinous layer of acetic acid bacteria that turns the alcohol in fermented apple juice into vinegar. In unheated vinegar, it remains alive and can appear as a fine turbidity in the bottle. To this, 40% honey is added, which DR. HÖHL'S sources directly from a Bioland beekeeping farm in Germany. No sugar is added; the sweetness comes solely from the honey. With 3.5% acidity, the mixture is significantly milder than the pure BioEss apple cider vinegar with its 5%. This makes it so versatile: you can use it by the spoonful where pure vinegar would be too sharp.
Taste
Sweet and sour are balanced in this bottle. This is how DR. HÖHL'S describes the character, and that is exactly what you taste with the first spoonful. First comes the round sweetness of the honey, followed immediately by the fresh acidity of the meadow orchard apples. Neither side overpowers the other; they remain in equilibrium.
Because the honey makes up almost half of the bottle, the mixture flows a bit thicker than pure vinegar. It coats the tongue more softly and barely tickles the throat. The underlying apple cider vinegar adds a fruity note reminiscent of freshly pressed apples. The honey provides depth and a slightly floral warmth.
Eaten straight from the spoon, the mixture is still too strong for many. Diluted in water or distributed in a dressing, it shows its strength: it seasons without dominating. In sauces, it rounds off acidity and salt, much like a splash of honey and a dash of vinegar, just in one step. Anyone expecting a sharp vinegar for pickling cucumbers will find this mixture too sweet. For that, the clear BioEss is the better choice.
Usage
REZEPTUR 1779 most frequently ends up in a glass. The manufacturer recommends apple cider vinegar drinks and small shots. For this, stir a spoonful into a large glass of water, still or sparkling, and season to your taste. In summer, a few ice cubes and a slice of apple go well with it; in winter, warm water with a slice of lemon.
In the kitchen, the mixture is a seasoning agent. According to the manufacturer, it is suitable for sauces, marinades, and dressings, for leafy salads and fruit salads. For a quick vinaigrette, whisk two tablespoons of REZEPTUR 1779 with four tablespoons of oil, salt, and a little mustard. This goes well with lamb's lettuce with walnuts, beetroot salad, or a lentil salad with goat cheese.
DR. HÖHL'S also mentions vegetables, tofu, chicken, salmon, soups, bowls, and smoothies. Brush a salmon fillet with the mixture just before the end of cooking to create a glossy, sweet and sour crust. Roasted carrots and parsnips from the oven get a spoonful as soon as they come out of the heat. Added to a pumpkin soup, a teaspoon highlights the sweetness of the pumpkin. Marinate chicken legs overnight in oil, garlic, thyme, and two tablespoons of apple cider vinegar with honey.
Fruit also likes this mixture. A fruit salad made of apples, pears, and grapes becomes more vibrant with a spoonful of it, without needing extra sugar. Store the bottle closed, cool, and dark.
Our tip: Stir a teaspoon into a gravy just before you serve it. The acidity brings freshness, and the honey blends with the roasted aromas.
Origin
The number in the name is a year. In 1779, the ancestors of the Höhl family in Hochstadt, now a district of Maintal, pressed wine from the apples of the Hochstadt meadow orchards. It was intended for serving in their own inn. Since then, the family claims to have stuck with the apple for nine generations.
RECIPE 1779 belongs to the youngest of these generations. Johannes Seibel and Anna Lenhard founded DR. HÖHL'S GmbH & Co. KG together with their mother, Johanna. Both can be seen on the family website with the first bottling of RECIPE 1779. According to the manufacturer, the mixture follows a recipe from Dr. Jarvis and is prepared in their own workshop. Every bottle is filled there individually by hand.
Around Frankfurt lies one of the largest contiguous meadow orchard areas in Germany, according to the manufacturer. Tall trees of old varieties shape the landscape there. The vinegar in this bottle is made from such apples. The honey comes from a partner family beekeeping farm that works according to Bioland guidelines. Both ingredients are organic and come from German agriculture, control body DE-ÖKO-012. The list of ingredients mentions none of the 14 major allergens. Because it contains honey, the manufacturer classifies the mixture as vegetarian.
