Bacanha Lime Syrup. Organic lime syrup made from lime juice and lime extract – for Daiquiri, Mojito, Caipirinha, and non-alcoholic lemonade.
Bacanha Lime Syrup is an organic lime syrup made from cane sugar, water, concentrated organic lime juice, and lime extract by the Parisian syrup manufacturer Bacanha. Non-alcoholic, 400 ml glass bottle, around 20 drinks per bottle. No bottled lime juice, no pre-mix, no coloring – acidity, sweetness, and lime aroma in one syrup that you dose yourself.
Lime Syrup by Bacanha is known by the manufacturer as Sirop Lime Brut and is the variety for your home bar. Almost every classic sour drink consists of the same two things besides the spirit: lime juice and simple syrup. A lime syrup combines both in one bottle, with the acidity of the juice and the sweetness of the cane sugar in a fixed ratio. At Bacanha, the lime is included twice: as concentrated organic lime juice and as lime extract, which carries the scent of the zest. The manufacturer describes the syrup as a pure aromatic concentrate of lime: exotic citrus scent, plus a slightly bitter aroma. It is recommended for Mojito, Caipirinha, Pisco Sour, and Daiquiri, and for everyone who prefers to mix the same drinks non-alcoholic.
Taste
The lime syrup tastes lemony and exotic, with the slight bitterness of lime zest and a sweetness that complements the acidity.
Lime is the citrus fruit with the green, almost resinous scent, and that is exactly what stands out here, carried by the extract. The juice provides the acidity that makes limes so much sharper than lemons. Cane sugar is the primary ingredient, which is expected for syrup; according to the manufacturer, a Sirop Brut is nonetheless less sweet than classic syrup. Mixed with sparkling water, it creates a limeade with a kick; in a cocktail, it provides a rounded lime note that replaces juice and sugar. Anyone expecting freshly squeezed limes will get something different: denser, sweeter, with more zest than juice. If you want to save yourself the hassle of pressing and still have the fruit in your drink, this is the right choice.
Usage
For a non-alcoholic option, the manufacturer recommends the Lime Mint mocktail: 2 cl of lime syrup, 2 cl of lemon juice, and 2 to 3 mint leaves in a glass, add ice, and top up with 8 cl of sparkling water.
For a Daiquiri, add 5 cl of white rum, 2 cl of lime syrup, and 3 to 4 ice cubes into a shaker, shake briefly, and strain into a glass. In a Mojito, Caipirinha, and Pisco Sour, the syrup replaces the simple syrup and part of the lime juice. For simple lemonade, 2 cl of syrup is sufficient for about 16 cl of cold sparkling water, a ratio of about 1 to 8; this means one bottle yields about 20 glasses.
The bottle contains 400 ml. Store in a cool, dry place; keep refrigerated after opening and consume promptly.
Our tip: For guests who don't drink alcohol, pre-mix the Lime Mint mocktail in a large pitcher and only add the sparkling water at the table. This preserves the carbonation, and everyone can serve themselves.
Origin
Bacanha is a Parisian syrup manufacturer founded in 2013, with an atelier in Seine-et-Marne near Paris, where all varieties are blended and bottled.
The fact that one bottle lasts for about 20 drinks is more than just a dosage guideline for Bacanha: according to the manufacturer, every 400 ml bottle replaces 20 ready-to-drink beverages including disposable packaging, and the glass bottle itself is recyclable. The lime syrup follows the house's recipe principle: organic cane sugar from South America as the first ingredient, water, then the fruit's juice and extract. It is heated gently at a low temperature. Bacanha states that the aromas for its varieties are developed in the Grasse region; for the lime, juice and extract are listed on the label. All 15 varieties we carry bear the EU organic logo. You can see what else the house produces on our Bacanha page.
For whom
This lime syrup is the bottle for anyone who mixes Daiquiris, Mojitos, or Caipirinhas at home and doesn't want to squeeze twelve limes for six guests. It fits in the kitchen for lemonade, on the table in summer, and for guests who want to drink non-alcoholic but still have a proper drink in their glass.
If you want your Mojito with mint already included, choose the Mojito Syrup; if you prefer to dose the mint individually, use the Mint Syrup from the same brand. The lime syrup is not suitable for those who expect the taste of freshly squeezed limes – it is a concentrate and remains sweeter than juice.
Organic lime juice, lime extract, and cane sugar, bottled near Paris – the organic lime syrup with which you can mix your own Daiquiri and lemonade.
