Die Honigwanderer Linden Honey. Organic honey from the summer nectar of the linden tree – clear, floral, and with a fine note of menthol.
Die Honigwanderer Linden Honey is an organic honey made from linden blossoms, collected by honeybee colonies using traditional German migratory beekeeping. Unheated, gently spun and strained, certified according to the EU organic standard, in a 250 g jar.
Linden honey from Die Honigwanderer begins with a scent that almost everyone knows. When the linden trees bloom in early summer, a sweet, heavy fragrance hangs over avenues, village squares, and parks. The treetops buzz with activity, so dense is the traffic of the bees. Both summer and winter linden trees grow in Germany. Both bloom one after the other from approximately June to July. For beekeepers, this is one of the important summer nectar sources. The resulting honey is a varietal honey: the nectar comes predominantly from this one tree species. To achieve this, migratory beekeepers transport their colonies specifically to areas with many linden trees while the trees are in full bloom.
Taste
The producer describes this honey as minty and floral. A light note of menthol is typical, distinguishing it from other light-colored honeys. It gives the honey freshness and a delicate spiciness.
In addition, there is a clear, aromatic profile. The sweetness is distinct, but never feels heavy due to the fresh note. A hint of the floral fragrance you know from linden-lined avenues in June lingers in the finish.
This places it between the mild and the robust varieties. It has more character than an acacia honey, but is significantly lighter in taste than forest or chestnut honey. If you are looking for a neutral honey for pure sweetening, you will find the menthol note too distinct. If you enjoy tasting the flower a honey comes from, you will like it.
Use
According to the producer, it is suitable for sweetening tea, yogurt, and muesli, or for spreading on bread. It pairs particularly well with herbal tea, peppermint tea, or a light black tea with lemon. The menthol note complements the herbs. Let hot water cool down slightly beforehand so the aroma is preserved.
On the breakfast table, it tastes great on buttered bread, braided yeast bread, or waffles. With cream cheese and a few walnuts, it makes a quick spread. In the kitchen, you can use it for dressings with lemon or for fruit salads with melon and mint. You can also glaze oven-roasted vegetables with a little honey at the end. A spoonful also goes well with goat cheese, best accompanied by a few fresh thyme leaves.
Honey crystallizes over time, which the producer notes is a natural process. It will become liquid again in a warm water bath at a maximum of 40 °C. Store the jar in a cool, dry place away from light.
Note: The only ingredient is organic honey; it does not contain any major allergens that require labeling. Honey is generally not suitable for babies under twelve months old.
Our tip: Add a spoonful of honey to a freshly brewed peppermint tea after it has cooled down slightly. The mint and the menthol in the honey will then interact beautifully.
Origin
Behind Die Honigwanderer today is the Goldnote beekeeping farm in Röhrnbach in the Bavarian Forest. Simon and Stefanie Weber manage the family business. Their main brand is Goldnote with regional honey, while Die Honigwanderer is their own organic line. They acquired the brand from its founders.
The concept behind it has remained: to combine organic beekeeping with migratory beekeeping. The bees travel to near-natural nectar regions in Germany, far away from intensive agriculture. The honeys are certified according to the EU organic standard, and the partner beekeepers pay special attention to the well-being of the bees.
For whom
This honey is for anyone looking for a light-colored honey with a distinct character. It is perfect for afternoon tea, Sunday breakfast, and as a gift for honey lovers. The Acacia Honey is milder and stays liquid longer. A colorful mixture from the summer nectar, including linden, is found in the Summer Honey. You can find all varieties on our Die Honigwanderer page. It is not suitable if you need sweetness without any distinct flavor of its own.
