Malena Medam grew up with the scent of elderflowers. In her Tübingen blossom kitchen, she learned from her father how to coax unmistakable aromas from this traditional plant. Today, with the family business HolunderBlütenWunder, she creates syrups in various varieties.
Conversation with Malena Medam
Malena, why is elderberry such a special plant?
Elderberry has long held a special place in folklore. Many myths surround it. In the past, people planted an elderberry tree at the entrance to their farmsteads — it was considered a symbol of protection and luck. Older generations still know the saying: "You should tip your hat to the elderberry." Its scent in early summer is unmistakable — sweet, floral, with that very typical, almost magical note.
How did you come up with the idea for the syrup?
My father has been making elderberry syrup for years — within the family and for friends. It gradually grew into a business. Today, we process the blossoms fresh during the season — by hand, with great care.
What sets your syrup apart?
We use only fresh elderflowers, which we process a few hours after harvesting. No aroma concentrates, no artificial additives. In addition, we have developed different varieties — classic, with lemon, with lime — and even an organic syrup with lavender.
How can the syrup be used?
Classically with sparkling water as a spritzer, in sparkling wine for an elegant aperitif, in cocktails, over ice cream or yogurt, even in plum compote. It also works unusually well in salad dressings.
