Rosenberg Organic Hot Mustard. Slightly coarse organic mustard with plenty of black mustard seeds – boldly spicy, with a delicate fruity touch of apple, pear, and honey.

Rosenberg Organic Hot Mustard is a slightly coarse organic mustard with a high proportion of black mustard seeds, rounded off with apple juice, pear juice, and honey from the Leipzig-based Mohr apiary. Georgsenf in Halle (Saale) produces it exclusively for Rosenberg Delikatessen. The jar contains 135 ml.

Hot Mustard from Rosenberg owes its spiciness to the black mustard seeds. They provide significantly more heat than the mild white seeds, which only play a secondary role in this mustard. The heat only develops once the ground seeds come into contact with liquid, and it typically hits the nose. The mustard is slightly coarse, and you can see the dark flecks of the seeds in the jar. To ensure the heat doesn't feel one-dimensional, apple juice, pear juice, and honey are added. They give it a delicate, fruity-sweet note. Brandy vinegar, water, Hallore salt, and spices complete the recipe.

Taste

The hot mustard tastes bold, spicy, and slightly coarse. After the first bite, the heat rises to the nose and then slowly subsides. Following this, the fruitiness of apple and pear emerges, carried by the honey. This delicate sweetness makes the mustard well-rounded without taking away its strength.

Compared to the other two Rosenberg mustards, this is the boldest. The mild mustard is creamier and sweeter, while the fruity version is more strongly characterized by apple and quince. Anyone who primarily knows mustard as a gentle seasoning will find this one too hot. According to the manufacturer, it is intended for those who appreciate a certain level of heat.

Usage

Rosenberg recommends this hot mustard for meat dishes and vinaigrettes. It shows what it can do when served with grilled bratwurst, boiled beef (Tafelspitz), Kasseler (cured pork), or cold roasts. For beef roulades, spread a thin layer on the meat before adding the bacon, onions, and pickles.

In a vinaigrette, half a teaspoon is enough to emulsify the vinegar and oil while adding flavor. It also works well in a mustard sauce for eggs, in a marinade for pork tenderloin, or in a crust for rack of lamb. Dose carefully at first and get a feel for it. A thin layer is sufficient on a ham sandwich or with cold roast beef. For those who like it hearty, stir it into some sour cream to make a dip for fried potatoes. Even a small spoonful adds seasoning to a potato salad made with broth and vinegar. After opening, store the jar tightly closed in the refrigerator.

Our tip: Beef roulades with hot mustard, bacon, and onions, braised for a long time. The heat dissipates during braising, while the flavor remains in the sauce.

Origin

This hot mustard is created between two cities. It is produced by Jörg Hündorf at Georgsenf in Halle (Saale), exclusively for Rosenberg. According to the manufacturer, it is picked up there using a car-sharing vehicle and then bottled in Leipzig. Within Leipzig, Rosenberg primarily uses a cargo bike for deliveries. The honey is supplied by the Mohr apiary in Leipzig. Matthias Rosenberg founded the small organic manufacturing business in 2016 with the goal of turning regional organic ingredients into delicacies. Rosenberg is organically certified; the inspection body's number is DE-ÖKO-060. Allergen information: The mustard contains mustard. Due to the honey, it is not vegan.

For whom

This hot mustard is for everyone who likes mustard with a bite and uses it for hearty dishes. It is a great choice for a barbecue, a Sunday roast, or a rustic snack. It also makes a great gift for mustard fans. The Organic Mild Mustard is softer and creamier, and the Organic Fruity Mustard with apple and quince is fruitier. You can find all mustards and spreads on our Rosenberg Delikatessen page. It is not suitable for children or anyone sensitive to spicy heat.
