Rosenberg Organic Plum Walnut. Organic fruit spread made from plums with walnuts and spices – creamy, savory, and slowly simmered in a kettle.
Rosenberg Organic Plum Walnut is a creamy organic fruit spread made from plums, walnuts, and spices by Rosenberg Delikatessen in Leipzig. The plums grow in the Grabein family’s meadow orchard in Arzberg. Each 170 g jar contains 84 g of fruit per 100 g.
Plum Walnut from Rosenberg falls somewhere between plum butter and a fruit spread. It shares its production method with fruit butter: the fruits are slowly simmered in a kettle until they are creamy. For this reason, there is no gelling agent on the ingredient list. You will only find five ingredients there: plums, cane sugar, walnuts, vinegar, and spices, all from certified organic farming. It shares a high fruit content with relatively little sugar with fruit spreads. With 84 g of fruit per 100 g, Plum Walnut is the most fruit-rich spread we carry from Rosenberg. The walnuts make this jar something unique. They bring a nutty, slightly tart note to the dark plum fruit. Rosenberg themselves say that this spread is not just for the Christmas season. We feel the same way: it is a jar for the whole autumn and winter, and tastes just as good in the spring on quark bread.
Taste
Plum Walnut tastes dark-fruity, savory, and well-rounded. The long simmering process concentrates the plum; its sweetness becomes deeper and takes on almost a caramel quality. The fruit's acidity is preserved, ensuring the spread does not feel heavy.
The spices stay in the background; they are simply listed as "spices" on the label. They give the jar a warm note reminiscent of plum cake and baked apples. Added to this is a little vinegar, which rounds out the flavor. This makes the sweetness feel less heavy, and the fruit remains clearly discernible. The color is a deep plum brown, just as you know it from a good fruit butter from the autumn.
The walnuts are what distinguish this spread from a classic plum butter. They contribute a fine bitter note and depth that goes well with the dark plums. The consistency is creamy and dense, and your knife will leave a smooth trail. Those expecting a light, jelly-like spread will find Plum Walnut too robust. For those who love autumn flavors, however, it is a favorite.
Usage
The easiest way to enjoy Plum Walnut is on bread with butter. A hearty rye bread or a whole-grain roll suits it better than light white bread because they provide a counterpoint to the savory fruit. On quark or cream cheese, it becomes a breakfast that keeps you full for a long time.
In sweet cuisine, plum butter has a long tradition, and this spread takes on those roles. Use it to fill yeast dumplings or steam buns, add a spoonful to Kaiserschmarrn or pancakes, or spread it on a braided yeast loaf. It also works as a filling for Buchteln (sweet yeast buns) or cookies. For a quick sheet cake, spread it thinly over shortcrust pastry and sprinkle butter crumbles on top. This way, you have a cake that tastes like autumn even outside of the plum season. Stirred into plain yogurt with oatmeal, your muesli gets an autumnal touch.
Plum Walnut is especially enjoyable in savory dishes. Put the jar on a cheese board next to a tangy mountain cheese, a mild goat cheese, or a blue cheese. The nuts in the spread complement the nutty notes in the cheese. A spoonful in the sauce for a game ragout, duck, or goose leg adds fruit and spice. Red cabbage also benefits from a dollop, best stirred in just before serving.
After opening, the jar belongs in the refrigerator. Because Rosenberg avoids preservatives, the manufacturer recommends using it within 5 to 7 days.
Our tip: Oven-warm Camembert with a spoonful of Plum Walnut on top and a few slices of farmhouse bread on the side. Five minutes of work, and your dinner feels like a Sunday.
Origin
The plums for this jar come from the Grabein family’s meadow orchard in Arzberg. A meadow orchard consists of tall-stemmed fruit trees distributed loosely across a pasture, often old trees with different varieties. The grass underneath is mowed or grazed, and the trees bear fruit for many decades. Harvesting is more arduous than on a plantation, but in return, the fruits ripen on large, old trees. For Rosenberg, this is a typical supplier: the fruits come from small, certified organic plantations and meadow orchards in Saxony, Saxony-Anhalt, Thuringia, and Brandenburg.
It is simmered in Leipzig. Matthias Rosenberg founded Rosenberg Delikatessen in the autumn of 2016 as a small organic manufactory. He describes his goal as transforming the best flavors from regional organic fruit and vegetables into fine delicacies. Cooking takes place in a kitchen at the Leipzig Kesselkollektiv, and the recipes are both self-developed and based on family traditions. Rosenberg is part of the Leipzig producers' network and works with other businesses in the region.
The manufactory is organic-certified; the inspection body has the number DE-ÖKO-060. According to the manufacturer, no artificial flavors are used. Allergen notice: The spread contains walnuts and thus tree nuts.
